Aguardiente (or ardent water) is liqueur distilled from sugar cane, and is popular throughout all Spanish-speaking and Portguese-speaking countries. In Colombia, it is distilled from sugar cane and aniseed, and it has 24%–29% alcohol content. It is commonly drunk straight in a shot glass but in Macondo, we serve it in various cocktails.
