The Glory Pastry is the Colombian Pastel Gloria. Eaten hot and fresh from the bakers' oven, the puff pastry treat contains guava past and dulce de leche or thickened caramel, then sprinkled with sugar. The pastel is believed to have an Arabic origin, possible from the ma'amoul which is found today throughout Middle Eastern countries. Mentioned in an SBS article about the caramel and Macondo!
