La Magdalena is a river fish. We grill and deep fry an entire, large fish, pre-painted with sauces, then served with coconut rice, patacon with hogao. Subject to seasonal variations in supply. The dish is named for one of the largest river systems in Colombia, at 1612km in length and home to many species of fish, alligator caiman, iguana, turtles, manatee, parakeet and pelicans.
